What the Rhubarb?!



 
I wanted to very quickly share with you a recipe from one of our board members, Wilma Davies.  She made these muffins for our Board Meeting tonight and they were delicious.  Local rhubarb is available now, and I thought this was a nice break from the usual strawberry/rhubarb pairing.

Rhubarb Blueberry Muffins
 
1/4 cup margarine
3/4 cup sugar
2 tsp baking powder
1 egg 
1/4 cup sour cream
1 1/2 cups flour
1/4 tsp ginger
1 tsp salt
1/3cup milk
1 cup blueberries

cream margarine and sugar
beat egg in sour cream
combine flour powder and salt ginger gradually add to cream mixture alternately with milk
fold in fruit
makes 12 medium muffins bake@400 for 20-25 min.
Enjoy.
These aren't the actual muffins Wilma made, they got gobbled up!
